am an entrepreneur that wants to venture in drying and packaging of mangoes sweetpotatoes pumpkinsand cassavas.i would like to know the stardard procedures of the same,machines and equipments required and if possible the suppliers.
The following is suggested:
a) Before beginning this enterprise, secure a market for the produce. You may consider local, regional or international markets.
b) Local markets in supermarkets such as Uchumi, Tuskys, Chandarana, Nakumat and the Nairobi up-town groceries.
c) In addition for sweetpotato, pumpkin and cassava look for nutria-mix (porridge) processors e.g. Kirinyaga Processors. You may also confirm with products in supermarkets to confirm the industrial processors
d) Contact Kenya Bureau of Standards (KEBs) for food safety standards and HAACP.
e) Contact Kenya Industrial Research and Development Institute (KIRDI) and Jomo Kenyatta University of Agriculture Technology for machinery and equipment for drying and packaging. This equipment is locally available.
